Step-by-Step Instructions:

1. Prepare the Chicken

  • Cut the chicken into bite-sized pieces (if using thighs).

  • In a bowl, mix cornstarch, flour, salt, black pepper, and garlic powder.

  • In a separate bowl, whisk egg and cold water.

  • Dip each piece of chicken into the egg mixture, then coat well in the flour mixture.

2. Double Fry for Maximum Crispiness

  • Heat oil in a deep pan or fryer to 350°F (175°C).

  • Fry the chicken in batches for 5-6 minutes until lightly golden.

  • Remove and let rest for 5 minutes.

  • Increase the oil temperature to 375°F (190°C) and fry again for 2-3 minutes until extra crispy.

3. Make the Korean Sauce

  • In a pan over medium heat, melt butter (optional) and sauté garlic and ginger until fragrant.

  • Add gochujang, ketchup, soy sauce, honey, and rice vinegar.

  • Simmer for 2-3 minutes until thickened.

  • Stir in sesame oil and remove from heat.

4. Coat the Chicken & Serve

  • Toss the crispy chicken in the sauce until evenly coated.

  • Sprinkle with toasted sesame seeds and chopped green onions.

  • Serve hot with steamed rice or pickled radish.

Tips for the Best Korean Fried Chicken:

Use potato starch instead of cornstarch for an ultra-crispy texture.

Double frying is the key to extra crunch—don’t skip it!

Adjust spiciness by adding more or less gochujang.

Pair with soju or beer for the ultimate Korean street food experience.
